Gluten Free Pancakes...

Hello Everyone I hope you are all ok. Something a little different for you today...

I know what you are all thinking... Pancake day was yesterday.. but my day was absolute chaos yesterday so I am having my pancake day today.

I may or may not have mentioned this before but I have coeliac disease - I will spare you the symptoms - but basically I have to stay on a gluten free diet, permanently. That being said I found it difficult to adjust to the gluten free life as gluten seemed to be in EVERYTHING  but the secret? Make friends with your kitchen... if you can cook you can pretty much eat everything you used to eat. If you have Coeliac disease or if you are just curious about living gluten free then Coeliac UK is a great source of info. 

Right back on track, I made pancakes and they were delish! I am no stranger to the wonderful thing that is Pinterest and just happened to find a few recipes that gave me inspiration.

The following is a simple recipe that requires very minimum effort and the result is amazing so without further a dooo...

Ingredients:
  • 125g gluten free plain flour (I used doves farm)
  • 1 medium egg
  • 250ml milk (I used skimmed milk)
  • a little butter for frying
Step one:

Put the flour into a large bowl and make a well in the middle.
Crack the egg into the middle of the well.
Add a quarter of the milk.
Mix with and electric whisk until smooth.
Add half of the remaining milk and whisk making sure there are no lumps.
Stir in the remainder of the milk.

Step two:

Heat a small frying pan.
Melt a little butter in the pan to stop the mixture sticking.
Add a small amount of batter into the pan so it covers the bottom of the pan.
Cook for 2-3 mins until the bottom is a light golden brown colour and flip pancake over to cook the other side (I'm not the greatest at flippin pancakes so I used a spatula... Ollie didn't complain about me dropping one!)
Cook until golden underneath.
Repeat the above steps until all the mixture has been used up.

Step three:

Serve on a plate with your favourite filling and enjoy!
I coated my pancakes in honey :)
